Cookin’ With Gas
In an effort to rid the house of way too many apples, I made Emeril Lagasse’s Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze. I like to cook, but baking? Eh. Anyway, it turned out pretty good, but I think I should have chopped the apples up smaller. Unfortunately, I entered the recipe into Lose It and discovered that it has approximately 430 calories per serving. I had a piece for lunch, but I think I’m going to send the rest of it to work with Al tomorrow.
So, now I’m looking through Food Network to find some other gastronomical taste treats, but probably not so much in the baking category. I’m looking more for dinner stuff. And my mouth is watering over this (minus the olives… because I don’t do olives).
I believe there’s a trip to the grocery store in my future.

I hate it when I find out something I like has more calories than I’d comfortably eat.
I was convinced Onion Rings were a better choice than French Fries, and then I read a tray liner and found out they were a worse choice than French Fries, cheese and gravy mixed together.
It was a sad, sad day.

Meatloaf muffins w/ bbq sauce
Fake-baked ziti
Rosemary Chicken Breasts, Brown Butter and Balsamic Ravioli, Warm Spinach Salad with Pancetta and Sweet Vinaigrette
That last one is amazing. I make it w/ a cheese & spinach tortellini instead of ravioli.

That definitely looked yummy – but the lack of nutritional information leads me to leave it right where it is! Let me know how it is!
